I know it's now been said, but you won't have to go farther than 2-3 hours to kill just about anything you want.
Glad someone posted the picks of the upland game in central OR (Bend is gorgeous BTW) and the Willamette valley (an hour or two south of you. The eastern side of the state (OR and WA) is heavy on agriculture. Plenty of corn, wheat, apple and cherry orchards for game to feed on. Basically you'll have a lot of different environments to hunt in so long as you decide to take advantage of it.
Oh, and sooooo much beer. OR actually has legislation in their state Senate (house unanimously passed it) to name an official state microbe. Brewer's yeast. It would take you a long time to sample all of the different beers made in the Portland area and Willamette valley.
You could make a week trip to NE Idaho and kill mountain lion if you want. That and north central WA to shoot Moose would be the only long trek you'd have to make.
