Same reason why 1155/1150 boards have 4 slots?
Dual to Quad but for the video professional it will be much cheaper to do 32GB @ 8x4GB than 32GB @ 4x8GB. Memory density comes with a higher cost.
You also have to remember these 2011 boards are just server parts for the enthusiast and professional.

Ahh...didn't know this for sure. I was thinking that might be the case but that makes much more sense.
