I cook bacon or sausage first every time i cook a jambalaya. Then pretty much do what you did minus tomatoes. Tomatoes don't belong in a jambalaya but to each his own. Kinda like using cream of celery and mushroom soup in one.

I have an etouffee recipe from an old room mate from Texas that uses cream of mushroom as the thickening agent instead of making a roux or using an instant roux. Not the worst bastardised south Louisiana dish I've ever had.

I hate tomatoes, but somehow don't mind them if cooked. I may try this just to see.
