Thanks to everyone! Never realized there were so many variations of pot roast.
I'm gonna go with:
Seering in Dutch Oven
Deglaze with red wine
Onion Soup Mix
Carrots
Potatoes
Garlic
I thought about the tomato paste idea but since I'm using carrots that would add too much sweet.
