When I lost weight a while back, I did the whole 5-6 "meals" a day thing and it wasn't too time consuming. Cook a bunch of meal typs stuff on the weekends so it'll last you most of the week. Portion everything out into bags or tupperware that same night, so all you have to do is grab it in the morning and roll. For your in between meals, bring things like apples, bananas, a bag of carrots; shite you can eat relatively quick that doesn't take much prep work.

Absolutely the way to roll.. Get your carbs from fruit.. keep a couple apples, bananas, oranges on hand. Stay away from manufactured/processed products and drink plenty of water.
Mixed vegetables like broccoli, caulifour, carrots will keep for several hours in a cooler tote. Almonds, cashews, peanuts without salt. Also boiled eggs are a good protein source. Boil and peel em ahead of time and keep em cool in a lunch tote with a frozen gel pack inside.

eta: you can't get fat from overeating apples
