Yes. You will not be able to pull it at 165* only slice it. If you want to have pulled pork you needto go to anywhere between 195-205. You will also hit a plateau around the 165 mark and your temp may not move for an hour. Just trust it, that is all the tough fibers being broken down into delicious goodness.
