His parents actually never worked. From the moment they graduated Hogwarts, they joined the fight against Voldemort. The Potter family was a strong wizarding family that went back a very long time. They descended from the Peverell brother that created the invisibility cloak deathly hallow, after all. Like many of the wizarding families that could trace their lineage back a long time (Malfoys and Blacks), they had amassed a fortune over the centuries. It is almost a patrician/plebeian type of society where the ancient wizarding families are the nobility.

Most Wizard families and such probably have a large fortune accumulated from the less regulated periods of their society, where they took advantage of muggles.
"Nowadays" they aren't really allowed to mess with muggles I don't think.

That's not true they worked as Aurors, at least for a time. I'm guessing they left the ministry when it became apparent that Voldemort had infiltrated most aspects of the Ministry, similar to what he was trying to do later on in the 6th and 7th books. But they were Aurors for awhile
