Boudin (a pork and rice sausage) and couche-couche (a kind of fried cornmeal mush) are staples of a Cajun cuisine that thrives in a relatively small area of southern Louisiana. Often spelled couscous or cush cush. The correct spelling from french descent is Couche-Couche.
