Rice.
It'll grow on dry ground just as well as it will in a pond. Farmers flood rice for weed control more than irrigation like a lot of people think.
My point is, if it floods or stays dry you'll make some kind of crop. Standing water on 65 day old whatever else can ruin your seed heads.
