I find the most oil comes from the chicken. I never have a lot of oil from the roux.

Yep. Just can't bring myself to skin the chicken because I guess I'm old school and think it just adds more flavor. But I do use the paper towel to get what I consider excess.

If I use chicken, I remove a lot of the oil after browning it, then continue with the rest..saves a lot of trouble and does not alter flavor..
There is usually still plenty of oil left.
