People are way to cavalier about this. You can't boil out botulism toxin. It's not the bacteria that gets you, it's the toxin which is temperature stable to 1000's of degrees. Always love the argument "well my grandpappy did it like this..." It's all great until you kill your kids/wife/friends/etc... We watched a video in Food Safety where this poor guy served a burger special every Wednesday for years w/sauteed onions. He'd cook a bunch up in the morning and store them in melted butter left on the counter. Well, low and behold, he served them one Wednesday and they were contaminated. Poor guy killed like 28 people doing it the way he always had.

BTW... The last time you and your family had a "stomach flu", you probably all had salmonella.

I already mentioned this. You can easily kill the offending bacteria, but once the toxin has been produced it's too late to salvage the food.
