Ditto. I use it almost exclusively when cooking if I don't have time to go elsewhere.

I almost forgot another locally made sausage that is fairly new. Freeman's sausage in Angie, LA is very good. They process deer but they also make their own pork sausage that is really good. They've got several different kinds to choose from and all of them are delicious.
