The question is whether Houmas House gets enough weddings to make the hotel worth the while

I've been to several in the past few years, and they have had more than one going on each time I've been there.

Definitely. It's one of S. Louisiana's premier spots for a wedding IMO. $150/head for food/drinks is what was paid for the last wedding I attended there. You want your guests to be able to enjoy that and not have to worry about driving.

Aside from weddings at HH, there are weddings at Oak Alley, as well, and nowhere close to stay overnight if that's what you'd like to do. In addition to that, there are the folks who like to visit all of the plantations in that area. There's nowhere to stay in closer range, so they would pick up that crowd as well. The hotel will be a nice place to stay for folks who want to take a few days to do the river road tours even as far as Nottoway.
