Boil them about 5 minutes, then immediately add ice to the pot, remove from heat, and let sit for at least 30 minutes with a lid on the pot.

WAYYYYYYYYYYYYY TOO LONG~!
Bring to boil and watch them. once you see the shells seperate from the meat, cut fire and add ice and soak.

It works fine for me. My batch on Friday night were excellent using this method. Adding the ice may help me out, but I always boil them for 4 to 5 minutes.
OP: Bottom line is that you can over boil them if they stay in there too long. Shrimp are fickle little frickers.

I put them in the water, then put the pot on the burner. When 1 floats they are all done...even if it hasn't come to a boil.

The minute the water starts boiling take the pot off the stove and set in the sink. Fill the pot with ice and your shrimp will be perfect.

This is correct.
I just wait for the water to come back to a boil and they are done!

depends on the size of the shrimp and how fast it came back to a boil.

I have never had an under cooked shrimp.

I think my previous post left a lot to be desired. I put my shrimp in boiling water and leave them for 5 minutes. It ususally takes a few minutes for the water to get back to boiling. My 5 minute rule is from the time of entry to removal, if that makes sense.

it's hard to undercook a shrimp
it's very easy to overcook a shrimp
depends on your burners but I usually have my fire off 3 minutes after dropping them in the water

I put the shrimp in boiling water, and as soon as they start boiling again, slide them off the burner and let sit for about five minutes, eat.
And a simple way to boil them:
1T salt, 1T tony's, 1T liquid crab boil
Boil potatoes and corn for 10 minuets, remove then cook shrimp as above. Good for up to 2 lbs of shrimp.
