Heat a little olive oil n a black skillet.... Rub with ur choice of seasoning (homeade or u can buy paul prudommes seafood magic, blackened redfish magic, etc)
Sear on outside for a minute or 2..... Flip......
Serve medium rare.
I cook them fairly often - over mixed green salad with olives and capers.... Or with a sauce (remoulade, hollandaise)..... Or with baked asparagus......
Snag a good white wine.

Marinate in lime juice, sesame oil, soy sauce, green onions, rice wine vinegar, and garlic for about an hour. Sear in skillet with a tiny bit of oil (enough to keep it from sticking) over high heat, about 75 seconds on each side. Consume.

Less is more, in my opinion. Pour on a bit of good olive oil. Season with a little salt and fresh pepper. Sear both sides in a hot skillet and serve rare to med-rare.

Grind a little black pepper and sear as others above have indicated. Leave center pink - so sear time depends on thickness. Remove from saute pan and deglaze with a splash of white wine. Add two tablespoons butter, a couple of good squeezes of lemon jiuce and two tablespoons of capers.
Plate steak and add lemon caper sauce.
Great with green salad and crusty bread - white wine.
