Cooking Mangrove Snapper

What is a good way to prepare this fish?

I have a hockory grill going, and was thinking of grilling the whole fish (gutted and scaled) in garlic lemon butter. But was just wondering real quick if anyone here had good ideas for Mangrove snapper. I have never had this type of fish before.

Hockery = hickory? Going to overpower a fish like that. If not I'm out the loop, what's a hockery (I googled)? eta: Otherwise I'd just go with lemon and butter or something mild like that yeah. Mango salsa?

yeah, My bad with the typo, I have a droid, and use "Swype" to type and sometimes it ruins words..lol



Anyway. I wounded up scaling the fish and stuffing it with lemons, dates, mango, and garlic, then put a chunk of butter on top. Wrapped both in foil and cooked them on my gas grill.


Served this with a side of Beef tenderloin roast that had been soaked in pineapple juice over night. I should have served it with a cold water fish to keep the Hawaiian theme going, but I wanted snapper.


Came out really good, meat was similar in taste to redfish, but a a lower price. I will get this fish again. Can't beat $3.50 a pound.

Get some cavendar's Greek seasoning. Leave on scales, brush filets with Garlic infused olive oil. Sprinkle genrously with Cavendar's and parmesan. Grill w/indirect heat until meat is flaky. don't baste it or touch it. the Cavendar's and parmesan will make an awesome crust. Really good.
