Boiling Crawfish for the first time...... whats your recipe?

Wife got me a pot, burner, paddle, etc. for xmas. Now how the frick do I do it?

Please give me your spice details and also method (how long do I soak, cook, etc..)

Whats the best months to buy crawfish?
(yes Im from LA and I just asked that question)

I use both powder and liquid boil.

Put in cut lemons and limes,throw in whatever the frick else you'll eat,bring water to rolling boil.
If doing corn and potatoes,let them boil for a good 10 minutes before adding crawfish.
Let water get back to a boil once adding crawfish and boil for 8 minutes.
Turn off heat and throw 2 bags of ice on(makes the tail meat draw in more seasoning).
Start testing the crawfish about 20 minutes into the soak and remove once the seasoning is satisfactory.

Put water in pot... Turn burner on. Put potatoes, Garlic, onions, and mushrooms in... Bring to boil till potatoes r done. Take potatoes n mushrooms out. Add seasoning. (big bag of louisiana and small bag of louisiana... Not the tiny one they just came out with) Bring to boil add bugs.. Bring back to hard boil n boil for 1-3min depending on crawfish. Turn off. Add lemons, sausage, hotdogs.. Larger potatoes and liquid crab boil. Let soak 15 min.. Add rest of potatoes, mushrooms, n corn. Soak 15 more min.

1 min for tender bugs. 3 min for hard bugs.

Eta: I buy bugs from December - August (sometimes) the "best" time to buy is after Easter. But that doesn't stop me

Well i do use a liquid and powder combination like Meaux but I don't put the corn in that early as I find it will be over cooked. I usually wait till after I drop the crawfish in. Also I've never boiled crawfish longer than 5 minutes and thats only late in the year when their shells are getting hard. I usually drop the bugs in and wait for the water to come back to a rolling boil then cut it off. Ice method also.

I used to but don't anymore.
Get yourself a nice sized galvanized wash tub,pour bugs in tub,put garden hose in tub and turn on.

The so called "purging" of crawfish has been debunked as a myth.
They still end up having shite in them which was what the general idea of purging them was supposed to take care of.

Put them in a large ice chest. Cover with water. Toss them with your hands a few times (makes them flap their tails to get the mud off). Drain. Repeat until the water is CLEAN. (usually ab 4 times)

So meauxjeaux brings the bugs to a boil for 8 mins, others here say 1-3 mins. Whats the magic #?

Easiest IMO is just buy the big plastic jar of zatarins. Put 3/4-1 jar in the pot and roll with it

Mojo, you're supposed to cut the lemons in half

And I remember when y'all went and did that... Quite a few years ago if I remember... Crawfishing of the 4 wheeler..??

Don't "purge" crawfish, do like someone said and put in ice chest with drain open and leave hose on till water coming out of drain is mostly clear.

Bring water and large bag of powder to a boil. Add potatoes, garlic, onion, lemons and a large glass of orange juice. Boil 6-8 minutes.

Add Crawfish. I turn off the heat right before the water starts to boil.

Add a stick of butter. Let soak 15-20 minutes, then start sampling.

FYI: If corn is frozen, it will absorb much more seasoning. If its fresh, not so much.

I add frozen corn when I turn off the heat. Fresh corn a couple minutes after I add the crawfish.
