Who's in charge of Deep Space Nine?

Often, especially in the latter half of the last season of Star Trek: Deep Space Nine, the entire senior staff is manning the bridge of the USS Defiant. With DS9 the lynchpin of the Alpha Quadrant, who is left in charge of the station? What if the Dominion had launched an offensive against the station? Surely they know, as we do, that without main characters the station is ripe for the taking...

Was Chief O'Brien always with them on the Defiant? I can't remember...it does seem like Sisko, Work, Major Kira, and Odo always seemed to be going places together.

If anything Odo and Kira were left behind more often than O'Brien. Odo especially.
