Neck roast is my next to favorite cut of a deer after the backstrap. I usually take 2 or 3 extra deer a year just for their necks.

Dusted in flour and am searing it now. I'll pull it and start a light sauté of carrots, mushrooms, onions and celery in a moment. Not sure if later to add pototos or not but I have plenty of time for that.
