I think one of the primary purposes of using jargon is signaling - it allows you to quickly demonstrate that you are someone who is "in the know" in a certain field. That's not to say that it isn't often useful shorthand as well. But think about literary criticism jargon for instance. What exactly does "signifying narrative of the Other" mean? Hell if I know, but it's something you have to be able to say to be taken seriously in those circles. Obviously I'm picking on literary criticism because it's an easy target, but there are similar examples in every field.

No disagreement, but it still serves a purpose and is not simply "saying something because we don't know how to say what we want to say" or whatever.
