The best cooking vessel to use is an electric griddle set at 350 degrees.

Two cups of a low gluten flour like Pillsbury All Purpose.
3/4 cup of buttermilk
1 egg
1 egg white
2 tsp granulated sugar
1 tsp of salt(kosher or sea please)
1/2 teaspoon of real vanilla extract

1. Wisk dry ingredients together in a bowl
2. Wisk wet ingredients except for the egg white in a bowl
3. Pour wet ingredients into the dry and wisk to just combine. A few lumps is preferably to a very smooth batter.
4. Beat egg white to medium peaks and fold into the batter.

5. Rub the griddle with a stick of butter cover the surface and use a 1/4 or a 1/3 of a cup measuring cup to pour the pancakes on the batter.
6. Wait to flip until there are large bubbles on the top side of the pancakes.
7. Serve with melted unsalted butter and your favorite syrup.

If you want to add blueberries use frozen not fresh they will hold their texture and not make the entire pancake blue.

This is my grandmothers recipe and they are the best I have ever had. She used a vanilla bean flavored sugar, so I am adding the 1/2 tsp of vanilla extract to account for the flavor.
