Anyone has a good one?? Going to Florida with the family for a week and everyone takes a turn cooking one night. Looking for something good and possibly healthy. Would like to either grill or oven cook the fish.

mayo chipotle sauce---mix chipotle powder (or adobo sauce from can of chipotles) into mayo to taste. Red Cabbage, tomatoes, avocado. I usually grill salmon for one meal and use leftover salmon for tacos.

I like to grill a simple white fish for tacos. Cod or even catfish. Not worth frying fish for tacos, as the sauce and the tortilla kinda negate the crispy crust.

Then a salsa. FINELY chopped bell peppers and some tomatoes. Avacado and an herb of choice.

Or a sauce similar to the one posted above. You could homemake a tartar-like sauce. Or some sundried tomato mayo. Add some shredded lettuce.

Then grill some chicken breasts cut into strips. Make a sauce w thousand island and cut it with mayo and maybe some honey mustard. Add shredded lettuce.

Give your guests some variety.

Hmmm, i'm also envisioning a green chili chicken taco....

Scroll down in the thread below for a recipe from poster, kimmie... There were some pics of this in another post, but they're gone. Be sure and use the mango. The mixture looks great while marinating.

You can grill or bake or pan saute.

Get your hands on some fresh cobia filets. And blacken them and pan fry in a skillet. What part of Florida?

i usually go pretty simple: corn tortillas, pan fry fish, garlic/lime aioli, and some shredded cabbage.
