I'm breaking out the ole pot today for the first time in five years. Do yall have any recipes or pointers. I honestly don't remember all the details. I have a 100 quart and only boiling about fifteen to twenty pounds. Thanks for any help.

For shrimp, I use twice the amount of crab boil that is called for. Those little bastards just dont want to accept the seasonings.
What else ya got going in the pot?

I was thinking corn onion sausage and potatoes. Do I do them like crawfish or differently for shrimp?

Bring water and seasoning to a rolling boil for a few minutes, add shrimp and they will initially sink and in a very short time (a minute or two depending on size and amount of heat and water). The shrimp will began to float, when most are floating kill the heat and let them soak, then they will start to drop, when most of them have sunk take out and enjoy. In short boil till the y float, soak till they sink. Any method that uses time leaves too many variables to risk ( size of shrimp, size of pot, amount of water, intensity of het, etc).

Everyone else in my family likes boiled shrimp so I know there's probably something wrong with me for this but I feel like that's a waste of shrimp and prefer them ANY other way.
As long as a person likes them boiled they're obviously not "a waste" to them and I respect that. To me, however, the best thing is whatever you dip them in.

Yep, just like a crawfish boil. I'd put onions, garlic, and lemons in with the crab boil.
Potatoes when the water is at a rolling boil. You can do sausage here as well.
Put the corn in 5 mins or so later. Then the shrimp 5 mins or so after that.
Lots of cayenne with the crab boil if you want heat. I'm always surprised how much salt and cayenne it takes for a

Should I put butter or oil in there for peeling?

I usually throw a stick of butter in. Most will say it doesn't help.

If you are using fresh shrimp and don't over cook them, peeling won't be a problem

I use a similar method that gets the same results. Bring water to a boil, add shrimp, when water returns to a boil remove from heat, soak til the sink.

Update. I got twenty five pounds of shrimp. I have four of those sixteen ounce Louisiana crawfish seasoning. I also got cayenne. How much cayanne should I use?
Posted on 5/29/11 at 5:28 pm to TigerTrucker
For 25lbs? Just dump the whole thing in there! That's what I would do.

I put oil in the water when boiling. Also don't add salt until they are soaking.

Overcooking shrimp is a nightmare.
The best method I have found to get a good seasoned shrimp is let them soak BEFORE you boil.
- Take your pot and fill with water and seasoning (i use louisiana powder boil)
- Put a little less water in the pot then you normally would
- Put your shrimp in the basket and put into the seasoned water.
- Add ice to keep them fresh
- let them soak for a minimum of 45 minutes. The longer they soak the more seasoned they will be. obv
- remove the shrimp and bring water to a boil
- once boiling, add the shrimp for about 2 minutes or until pink. (always pull one or 2 and try)
- when cooked to desired doneness, remove and put on ice.
- crack a beer and enjoy
