Has it always been like that? Sounds like the type of thing lawyers and insurance agents made happen to keep the event from getting sued because someone used spoiled meat.

For as long as I can remember it has been like that, The Jambalaya Festival intent was to keep the award winning jambalaya as true to tradition as possible, knowing that with time things change but to keep the ingredient list the same would help keep it similiar year to year and decade to decade
