I am cooking in the contest today at 11:30. You can buy jambalaya from the festival booth. Cooks are not allowed to serve from the competition pots to the general public. Heck, they won't even let the public under the tent where the cooks are. After we turn in our sample box to the judges, the pot we cook is turned into the festival to be sold so you will be buying competition jambalaya. You just will not know who cooked it.

Yeah it seems like there are pretty strict rules in this competition. Unlike the chili cookoffs I've been to the public doesn't vote, it's all up to the judges.When does the competition jambalaya start getting served?
