I have made a big jambalaya before and had leftovers. I always take the extra add a little water and made fried Jambalaya Balls with them. I like Zatarans Fish Fry Seasoned Batter. I spice mine up a little with some Tonys. The key is making them stick. Once you have figured that out they are amamzing.
I have also tried the stuffed bellpeppers method too. Stuff the bellpeppers with jambalaya to the top. Then take some crushed bread crumbs and parmasean cheese and make a cap for them. Bake them in the oven until the tops or golden brown and the bellpeppers become soft.
