Are you doing a lot of cardio/weight training on top of that to lose?
At the same time as I worry about eating to many calories/day, I also worry about not eating enough. I heard that eating to few cals can deter weight loss as well. You haven't had any issues with this?

No. As I said in my book length post, I had no energy to do that due to the high weight and blood pressure.
As I said, I have started some minor exercise on Sunday.
When you weigh as much as I did, just cutting calories will cause a lot to drop off.
Now that I have lost over 70 pounds and my blood pressure appears to be under control, I will slowly start adding exercise, but I have been in terrible shape for a long time so it will take time to get into any semblance of decent shape.
Yes, if you don't eat enough calories, your body can go into famine mode. I have hit several plateaus in the last six months. I had to 8 day periods with no loss, which is what made me shift back to Atkins.
From what I have read on the net, 1000 calories appears to be the number you do not want to go under. Some people say 1500.
If you are a patient person and don't need to see constant results, then staying around 1500 is the way to go, but I need to see results to keep motivated which is why I am always closer to the 1200 number.
You need to take a diet just like people in AA take not drinking, one day at a time. Don't think of it like I am going to be hungry forever, just get yourself through the current day.
A diet is finite in length no matter how much you have to lose. I should hit my optimal weight around March which will be the one year mark for the diet. Most people won't need to work nearly that long if they stick to it.
The tunnel may be long, but you can see just a bit of light... it won't last forever.

see the comments in this thread about metabolic confusion. its eating the same LOWER CALORIES every single day that cause stalls and for your body to 'turn down' its metabolism.
working out is certainly a deterrent against this as your body will HAVE to feed your muscles; but varying the calories (tons of sites explain this) will help keep your body off-balance and losing weight.
