Gauging interest in a Pho restaurant for Lafayette

Was discussing with VN friends the need for a Pho place in Lafayette. They believe it wouldn't take as most VN people eat at home. I told them we drive to Baton Rouge to eat VN food and there may be others.
Noodle House is good, but they serve Cambodian style food.
Ok you Lafayette folks, what are your thoughts?

Maesone serves a decent Pho, although it's a bit more expensive than Vietnamese places in Baton Rouge.

Unlike most typical noodle houses, they close around 2pm, while most would stay open throughout the afternoon. They really have some tasty dishes.
