Egg Salad - Totally Underrated as a salad

I always put way too much relish in mine. When someone eats it they go WOW too much relish.

Anybody got any great Egg Salad tips?

I've heard of using olive salad with the eggs... Haven't tried it but it sounds interesting.

Yep, when in the Abbeville area, go to Robbies Grocery on State St and buy some. Best I've ever had...

The frickn tater salad is even better. No relish in either

It was unreal. Some people fear the halapeno. That wasabi stuff is the only stuff that really gets me. I was crying.

I am definitely trying that. Great idea.

You know I take a little bit of hell for putting mustard on my Egg Salad sammich. People are telling me all the time "Rollie is that mustard on your egg salad". Then I say why yes. yes it is. I like to mix it up that way. Not always though.

I usually go with something like this as the core recipe:

* 1 large egg
* 2 large egg whites
* 2 tablespoons nonfat mayonnaise
* 1 teaspoon Dijon mustard
* 1 tablespoon canned sliced ripe olives, drained
* 1 tablespoon thinly sliced relish
* Modest amount of Salt and pepper
* 1/2 cup (3/4 oz.) alfalfa sprouts
* 2 tablespoons WILDCARD Ingredient

Then I put this in between two pieces of bread. Mostly wheat, but sometimes white. I like to mix it up.

The fun for me comes in deciding what that WILDCARD ingredient will be for the week. Nutmeg, cinnamon, banana peppers. You name it, WILDCARD.

Great stuff. I discovered it about 6 months ago. I think it was an ad in Southern Living. Not sure. But I'm using it a lot. Great on deviled eggs.

I've put capers in it instead of the relish before, definitely delicious. Also I have a recipe that put shredded onion in it which gives it a completely different flavor, but still real good. Egg salad is one of those things that you can play around with and add whatever you have in your kitchen that day IMO.

capers is a great idea. Some times I get this special jalapeno bread to spice things up also.
