I'm a noob when it comes to expensive nice knives. I bought a 30 dollar one that fits my hand well and sharpens easy.

Can anyone convince me to spend more than that?

Nope. Not on a message board. Bring your knife over to a friends house who has a really nice (not necessarily expensive) set/knife. Cut the same foods with both.

There is a noticeable difference between "cheap" knives and "expensive" knives in balance, hand feel, fit, cutting ability, sharpness and durability.

Some people can use a cheap knife, keep it razor sharp and throw it away when it breaks/gets old. Other people have to have a nice knife to cook with. It's really up to the chef/cooks preference.
