Try and stick to the smoother lighter versions when starting out. Most of the Islay malts take a little getting used to. Definitely add a little splash of water. Hard to go wrong with the Macallans. Other smooth light single malts are Auchentoshan, Dalwhinnie, and 10 year old Glenmorangie are nice if you can find them.
