some years ago gimaancos on govt made/served some awesome oyster stew.anyone know their recipe or have a good recipe for oyster stew.

otis2 thanks for the recipe cooked the oyster stew using that recipe new years day it was GREATthe only thing that didnt turn out right was the score of the lsu game

This is closer to the one I do and I love it at Casementos. I don't like the bacon in it for some reason. Probably the only time I will say I don't like bacon. Also, I use half milk, half cream and I like to add celery and green onions.
My mother and father have made this recipe for probably at least fifty years. Add more butter as well.

That's pure goodness.I've done that before, though I've also added cream and green onions, as well as a small,blonde roux.

yeah the roux made with the butter just enough to give is a little bit of a thickness. Like coating the back of the spoon. And just let the oysters curl. Not long. Dab of butter on top when it is in the bowl.
I'm making this tomorrow. I'm hungry and I have everything except the oysters but my neighbor is coming in from Houma so I'll get him to get me a quart from Wilson's. I can make the exception for my freezer month since I have everything else and gives me a reason to use some of the five or so pounds of butter I have in the freezer.

I like mine very simple
. 1 pint shucked oysters, with liquor
• 1 quart milk
• 1/4 cup (1/2 stick) margarine or butter
• salt and pepper to taste
• Tony's
