a little different touch...I guess I can not get the Cuban out of me -lol
when I brown the sausage and the chicken (as I am browning it)I sprinkle a little sugar by hand.
it gives it a very lite caramelized taste...
about one teaspoon for the entire pot.
use File AFTER cooking..not during , it will become "stringy"
BTW GUMBO changes from each part of the state to another, as IN THE OLD DAYS, people used what was readily available.
where seafood is more readily available, seafood is used
the same for the different kinds of wild game.
