louisiana lagniappe hush puppies recipe question

I went their this past summer in Destin and couldn't quit eating them. They were very light and crispy and not greasy at all. All the other food they fed us was outstanding, but i was looking for a recipe for the hushpuppies or something close to get them crisp and light.

Don't put flour in them...makes 'em heavy.Fry medium to small hush puppies and don't crowd the fryer. Keep the heat at about 325-330 and you'll get what you want.
