Banana Leaves

I have a few trees and I like to cook. Anyone ever used them as cooking vessels? Any pitfalls to avoid?

I use them when cooking Puerco Pibil aka Cochinita Pibil (Mexican), or Bacan (Cuban).

there is an east Indian dish where you basically take a fillet of fish, marinate with different spices (mustard paste being the base spice) wrap in in a square piece thrice the size of the fillet, so if the fillet is 3x3, you cut the banana leaf in to 9x9 pieces, then tie the whole thing with a string, then steam it.

BTW, babana leaves are used as plates/dishes in several countries in south asia, and from persona experience I can vouch that they are pretty sturdy and usable as long as you are careful enough not to allow the gravy (if any) to go near the edges

They serve fish steamed in a banana leaf at a restaurant i go to in NYC. The fish is placed in the center and drizzled with coconut milk. It's a pretty cool presentation. Google "fish steamed in a banana leaf"..

You can wrap that leaves on anything and steam it, plain rice or whatever. People use it to give the food a little scent to it.
