Smoked Duck

Anybody got a good recipe for Smoked Duck? Picked one up on sale a while back and thinking of smoking it instead of roasting it.

I do one every year for thanksgiving. When I smoke poultry i do it the same as I would roasting in an oven. Same temps and time. I find with chicken and ducks if you cook them too low and slow they get too much smoke and the skin is rubbery.

What kind of smoker are you going to use?

I use a water smoker. I’m smoking ducks to @ 135 using pecan and charcoal.

I have a pit boss copperhead pellet smoker.

I don’t know anything about that smoker. One rule of thumb is dont overcook the duck…you can always add more cook time, but you can’t uncooked it.

I’m smoking wild ducks,,,they cook quickly. I shoot for med-rare.

Cut leg quarters off and remove backbone. Smoke those longer than breast.
