Open to anything. Considering Costa Rica, Sedona, West Coast, or maybe even just something easy like Gatlinburg or Ashville. Thanks for any suggestions.

Honestly any of those sound great. If they haven't been to grand canyons. Do Sedona, and take a day trip to Williams, AZ to do the Grand Canyon Railroad up to the Grand Canyon.
