Staying four nights on Eagle Beach. Must dos, restaurants, etc? Should I rent a car? We mostly like to relax on beautiful beaches and check out unique bars and restaurants.

We went this past summer.
Yes rent a car. We rented from a local company, Justin’s.
You can rent an umbrella from Travel Light Aruba. They can deliver it to you. It’s extremely windy so get their recommended umbrella.

Go to the remote uninhabited side of the island for awhile. Much more interesting in my experience. It was really something to see the fury of the waves crashing on the rocks.

Do the UTV tour. Worth the money. There's a good restaurant I think it's called Azore. The food was amazing. A lot of cool bars in the "downtown" area near all the flagships hotels and all-inclusives. Group of us did the the Catamaran half day. Great snorkeling and good food/drinks. They bring you out to a sunken ship to snorkel around and swim.

If you have a car go to Baby Beach near San Nicolas then eat at Flying Fishbone or Zeerover in Savaneta .
