Where can you go for overnight train rides with sleeping cabins and such?

You can do it on AMTRAK in the US. Based on the reviews I've seen of most of the experiences, and the cost, I'm going to pass on the US. There are a couple of interesting routes (London to Scotland, etc.) in Europe. There's a decent listing at Trainline.

We need way more details. Are you looking for a luxury overnight train ride? Do you just want to sleep on a train to check off a box? Where will you be based from? Where are you wanting to go?

Lots of great options in Europe, Asia but need more info on what you want to do. In US look at routes along West Coast and Midwest to West Coast, and definitely consider San Francisco (Sacramento) to Seatle on the Coast Starlight.
