Suggestions for Paso Robles and surrounding area?

Looking to head to Paso Robles for a few nights in early November and looking for suggestions. It has been a long time since we have been through there, so we are not super familiar with it.
Any suggestions for nice places to stay? Best to stay out at a winery or stay in town close to walking to restaurants, bars, breweries, etc.
We plan to hit some winery tours etc one day, then likely hike in Pinnacles one day, but open for other suggestion for activities.

We were there the week before the LSU- UCLA game when Hurricane Ida hit.
We stayed at the Paso Robles Inn, a nice hotel right on the main square.
We visited a bunch of the wineries. The most scenic was Daou. It is on top of a mountain overlooking the vineyards. And the wines were excellent.
Justin is another pretty place with a nice tasting room.
Our favorite smaller winery was Calcareous.
Donati and Turley are a little drive from town but are worth visiting and are right across the street from each other.
There are a number of excellent restaurants in Paso Robles, most of which are on the main square or a block or so from it.
BL Brasserie is a good French restaurant.
Buona Tavola is a good Italian restaurant.
I’ll Cortile next to the Hotel Piccolo was very good as was the Piccolo’s rooftop bar and restaurant.
La Cosecha was another favorite.
We loved Paso Robles. It is a smaller and more laid back and countryfide version of Napa.

Sensorio is a cool place to hang for an evening. We opted for a terrace table...personal fire table, overhead heater, and once the sun went down, it was a fairly intimate setting even though there are people on the terrace with you. Definitely a quiet evening, but that is what you sign up for.
We stayed at an airbnb that sat on some acreage, so it was very peaceful, but only about 10 mins from downtown.
The Hatch Rotisserie is worth a meal.
We spent the most time at Daou for a tasting, it was just a great setting. We popped in to Tooth & Nail for the sheer "cheekiness" of the castle, it was just "meh", but we do have some fun pictures from there! We hit a few others, but nothing really stands out above any others off the top of my head.

Make sure you make reservations for a tasting at Daou in advance. You need your name on the reservation list just to go up the mountain.
We spent the better part of an afternoon there.
After the tasting we had lunch at the bar then the bartender conducted another premium tasting for us.
You get free or discounted tastings if you join their wine club, which we did.

We drove to the coast one day. The little town of Cambria is a great stop for lunch. Cayucos is south of Cambria. It’s right on the ocean and worth a short visit too. The temps will be much cooler there than in Paso Robles.
