Christmas in Kentucky, Recs Needed

Looking for recommendations on best area and things to do on a Family trip with a 10yr old the week of Christmas in Kentucky.
I want to go to at least 1 distillery and maybe a 2nd if theres time. Considering Wild Turkey, Buffalo Trace, Maker's Mark, Four Roses, or Bardstown. Any insights are appreciated.
Only other thing we want to do is the Ark Encounter in Williamstown.
What are best cabin type places to stay in the surrounding areas and other things to do?

There is a Polar Express train ride somewhere around Bardstown/New Haven (Bourbon country).
Red River Gorge for cabins.
Or there are some really cool bourbon themed AirBnBs out on the bourbon trail.
Slide down to the Opryland Hotel for the Christmas Lights one night.
Woodford Reserve is a good tour you didn't mention.

I'll definitely look into these suggestions. Woodford I like, but don't necessarily love. But if the Woodford tour is better experience then that may be the ticket.
