quick crab cake recipe??

Will probably be sneered at for posting this, but when in a hurry, we use Zatarains Crabcake mix. Mix, water, mayo and a pound of claw meat (more flavor). Mix and let it sit in the frig for 30 minutes, make your patties and pan fry in olive oil. Pretty dam good, and very quick.

For one pound of jumbo lump crabmeat, mix 1/2 cup mayo and one egg. Add whatever seasonings you like. Old Bay works well or just a bit of crab boil. Fresh lemon zest is good. If want to add chopped veggies, add whatever you like. Red bell pepper, onion and green onion work well. Fresh chopped jalapeno or other peppers can be good also. Just flavor to you liking, but don't put in too much of the chopped veggies or you'll have trouble with the binding of the cake.

Add some panko...about 1/2 cup. GENTLY toss in the crabmeat. This will not be still. You can add a little more panko to your liking. Shape into cakes. Cover each cake with panko on the outside for the crust. Refrigerate to firm a bit. I put them on wax paper.

Fry in skillet. Use clarified butter or olive oil. Whatever you like.

This is my "I don't have time to make crabcakes" recipe. It's a real quickie.

A Crab Cake done right..is a Jumbo Lump Crab Cake..with just enough to hold the meat together..




Unfortunately, most restraunts and stores(even many high-end ones,) make Cracker Cakes w/hint o' crab, especially here in the deep south, further away from Maryland, where most people don't know the difference, yet will still pay top dollar. It's for the folks that think food should be caked in batter..

1 pound backfin Blue crab meat
8 saltine crackers
1 egg beaten
2 tbsp mayonnaise
1 tsp mustard
1/4 tsp Worcestershire
1/2 tsp Old Bay
salt to taste
2 tbsp vegetable oil

Mix all but the crab and oil. Fold in the crabmeat. Form and refrigerate for an hour. Saute gently.

My formative years were spent in Rock Hall, MD. This is all you need.

You can use less mayo and crumbs, if you like and see how that works. Those amounts are estimates. I don't use too many crumbs in the mixture, but I like them on the outside for several reasons. I like the crunch and I don't care for the crabmeat to be fried hard on the outside like the picture above. I don't care for crispy crabmeat.

My sister used the mix once, but with her own additions and they were just fine.

The taste sensation of the slightly crispy outside and the steamed lump of goodness inside will blow away all other attempts.

I usually add some chopped green onion. It produces a pretty decent crabcake, more crab than cake.

As an aside, one time I tried to slip in some sheepshead boiled in crab boil instead of crabmeat, and it took like one nano second for my oldest to ask me what was wrong with them...
