One pork butt, one large onion.
Slice onion, place in crockpot. Put pork butt on top of onions. No seasoning, no sauce, no Pepsi, nothing.
Cook low 8-10 hours. You’ll have a fair bit of liquid in the crockpot, fat from the pork and juice from the onion.
Put oven on 400. Shred pork, add pork and cooked onion to foil lined baking sheet. Season with salt, pepper, garlic powder, chili powder, cumin, smoked paprika, cayenne/red pepper flakes (if you want it spicy)
Put in oven, stir occasionally for 20-30 minutes, want to get some crispy edges. Add sauce if you want, up heat to 450, just long enough to caramelize sauce.
