re: Homemade Chicken Salad

I guess I am a minimalist when it comes to chicken salad. No nuts or grapes or crunchy things, even onions, which is why I grate the onion. Probably weird but that's the way I like it.

Here are the only ingredients I use. Lemon juice is the key ingredient in my opinion.

chopped chicken
lemon juice
grated onion
chives
Dijon
Mayo
salt
pepper
paprika

Edit: I don't care for smoked flavor in chicken salad so rotisserie would be my choice between those two. Or just poach some chicken in a little water. I think it turns out moist and perfect that way.
