Both would work, but will (obviously) provide different flavors. We prefer the chicken to be finely chopped, so I use my vegetable chopper to break down the chicken.

Mayo, brown mustard, dill pickle, celery, salt (celery salt), pepper is a good classic recipe.

If you want less calories and/or higher protein, sub out some of the mayo with greek yogurt.

Growing up, Mom always made chicken salad with cream cheese instead of mayo- VERY DELICIOUS.

If you use smoke chickens, a little Worcestershire is a nice addition.

I don't really use a recipe, I just go by looks and taste- not really sure if that helped you out at all, but might have saved you a Google search
