If going with Wisteria you will need to make the trellis pretty hefty since they get to be some seriously heavy vines over the years and will tear apart anything built lightweight.
I know this grows wild, but have you given any thought to honeysuckle? I had that on a fence at my last house and it smelled great when in bloom.

Japanese honeysuckle (while invasive) is a good choice. Not as woody as confederate jasmine and more easily controlled.
