Honestly, what I want to see first is AI controlling ambient movement and dialogue for non story NPCs. That would be a massive game changer in immersion.

Yup. When we go all the way back to Xbox One debut in 2013, this was what they were trying to sell. The "Cloud" was going allow this massive computing power to make the world more dynamic and immersive. We all know MSFT shite their pants after that.

The power is there now with the cloud and AI coming up with lightening fast thoughts based off real time information. With online connected games, there is no reason this should not be doable now with dialogue. Ambient movement would need to be designed into the game, but still new games should have that achievable.

Part of me is hoping Rockstar is going to blaze this trail for us with GTA6. They are leveraging some cool AI-ish code to build out the buildings, with hopefully every building is accessible.

Game development has been pretty static for years. Some better graphics and frame rates, but everything feels like it is just an iteration from something else. Flight Sim was on to something with real time weather, traffic and globe mapping.
