Seems like a pretty easy business to set up. Buy a large refrigerator truck. Go around offer $.25 more a pound to farmers. Undercut the wholesalers by another $.25 a pound and make out like a bandit. Just gotta hope you don't get killed by some crawfish mafia for stepping in on their turf.

The farmers would never sell to you. There are some unwritten rules that they follow.

So the guy in that truck typically has a mark up of .50. You overpaid by .25 to the farmer and then sold to the restaurant for .25 less than the other wholesalers. Zero profit for the day, very productive
