SA in general is like New Orleans. A fine city to visit in the spring or fall, but miserable in the summer.
Schlitterbahn is a nice day, and a 5 year old isn't going to get much out of river tubing... so not sure what else you would do. 5 year old won't enjoy the hill country wineries. Maybe they enjoy the caves, maybe not.
With a kid that age, that's a Thanksgiving week type trip.
