One of my favorite meals as a child was when my Mom fried pork chops. Seasoned flour only and in the deep fat fryer. They didn't fry for very long so they were still moist and they weren't the most thin chops. We had LeSueur sweet peas in the silver can and shoepeg white corn with sort of a light roux. From time to time, I recreate that meal.

I NEVER regret having BLTs for dinner. Underrated? I think it is because I only fix them once every 5-6 weeks which means I do not eat them enough...
